Armenian Soup

Quick, easy, tasty and unusual
Preparation 8 mins ∙ Cook 30 mins • Serves 4-6

INGREDIENTS

  • 50g red lentils
  • 50g dried apricots
  • 1 large potato
  • 2 pints stock
  • juice of ½ a lemon
  • 1 teaspoon ground cumin
  • 3 tablespoons chopped fresh parsley (2 if dried)

DIRECTIONS

  • Roughly chop the potato.
  • Place all ingredients in a large pan. Bring to the boil then simmer for 30 minutes.
  • Blend, reheat, season and serve.
  • Best eaten on the day
